This course provides training in the proper safety procedures, regulations, food safety and sanitation procedures for working in a commercial kitchen. Trainees will use a variety of preparation, cooking and finishing methods in the production of a variety of flour-based products, stocks, soups, sauces, meat and poultry dishes, fish dishes, rice and pasta dishes, appetizers and salads, breakfast items and desserts. Trainees will also learn to plan and prepare simple meals for different occasions showing an understanding of the fundamentals of nutrition and the importance of a balanced diet and following recipes using the stipulated weights, measures and procedures.
The graduate of this course can either work in a food establishment as a salaried employee, or start a small business.
